Garlic & Herb Stuffed Mushrooms

Ingredients:

- 12 large mushrooms, cleaned with stems removed

- 1 tablespoon olive oil

- 2 cloves garlic, minced

- 1/2 onion, finely chopped

- 1/4 cup breadcrumbs

- 1/4 cup grated Parmesan cheese

- 2 tablespoons chopped fresh parsley

- 1 tablespoon of garlic & herb seasoning

- Salt and pepper to taste

- Optional: 1/4 cup cooked and crumbled sausage, bacon, or finely chopped shrimp (for added flavor)

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, and sauté until softened and fragrant, about 3-4 minutes.

  3. If using, add cooked and crumbled sausage, bacon, or chopped shrimp to the skillet with the garlic and onion mixture, and cook for an additional 2-3 minutes.

  4. Remove the skillet from heat, and transfer the garlic, onion, and optional meat mixture to a mixing bowl.

  5. To the mixing bowl, add breadcrumbs, grated Parmesan cheese, chopped fresh parsley, garlic & herb seasoning, salt, and pepper. Mix until well combined.

  6. Take each mushroom cap and fill it generously with the stuffing mixture, pressing down gently to compact the filling.

  7. Place the stuffed mushrooms on the prepared baking sheet.

  8. Bake in the preheated oven for 18-20 minutes, or until the mushrooms are tender and the stuffing is golden brown and crispy on top.

  9. Remove from the oven and let cool for a few minutes before serving.

  10. Garnish with additional chopped parsley if desired, and serve warm.
